Meditteranean recipes!

Hi are there any meditteraneans who could give me some recipe ideas, for healthy, low-cost meals?

Saltinbocca alla romana

This is a roman recipe. It is quick and it always has a big success. You need chicken breast, some ham (it's better to use a quality blackened by smoke that comes from northern italy called speck), some sage, some toothpicks.
Cut the chicken breast in pieces (not too small), make them thin using a meat pounder and put some salt. Then flour them on both sides. Afer that put in each piece of chicken a leaf of sage and a piece of ham. Close with one or more toothpicks and fy in oil.
You can also try this recipe with turkey or veal. Let me know. Ciao Livia

an easy to do recipe , low cost and yummy is "ojja" and needs :
for one serving ; two fresh tomatoes, one green pepper ( hot according to taste), 6 cloves of garlic , 1/2 c sp of powder caraway seeds, a pinch of salt and pepper , 1 c sp of tomato paste ,two fresh eggs and 1/2 glass of olive oil.
Here goes:put the chopped onions , tomatoes , peppers and garlic into a small saucepan adding the tomato paste then add caraway salt and pepper and olive oil .Cover with just a very little quantity of water then simmer for about a quarter of an hour ; once it is cooked add two eggs and stir gently with a spoon until the scrambled eggs are cooked .Eat while still hot with bread .
OR:Meat balls in tomato sauce :
250gr of minced meat, salt and pepper, powder mint, olive oil and 4 cloves of garlic .Tomato sauce .
Mix the minced meat with salt, pepper, 1 t sp of powder mint , 1 tb sp of olive oil; make balls out of them making sure your hands do not get sticky by washing them from time to time while you're shaping the balls.Pour the tomato sauce into a saucepan, add 2 tb sp of olive oil , add a little water to liquify the mixture then dip the meatballs into that mixture and cook for about half an hour.Meanwhile you can prepare some rice which you season with safron , laurel bay leaves, pepper and salt .
