Spanish recipes please!!

It is a firend of mine's birthday next week and I've invited a bunch of friends round to supper to celebrate. She's from Madrid, and I thought it would be really fun to do a big spanish feast... The thing is that I've never really cooked much spanish food, what do you recon I go for?

Mmm... paella

Yeah, you should definitely do a big paella, it is really easy and can be made for as many people as you like... All you need is a big pan.

If you want a real feast, then have that for your main meal, but think of all the other yummy things you can have before... Like tortilla, chorizo, and lots of other little tapas things, stuffed olives etc.

... let me tell you that a paella is not so easy as you think because it's not only the rice and mixing it with the other ingredients. You should also have a good "caldo" (I don't know how you say this in English) to boil the rice.

A Spanish tortilla would be a good option. You can leave prepared before the fiesta starts and it likes everybody.

Ok, here you are

Ingredients (for 4 people):
8 eggs
4 medium potatoes
half onion
olive oil

First, you have to peel the potatoes in slim slices and the onion in rings. Add salt. Then, you have to put the potatoes and the onion to fry in hot oil (a good quantity) and move all the time till the potatoes are so soft that you can smash them inside the frying pan.This is very important, ok? IT takes some time. When you see the potatoes are soft enough, you take them out of the frying pan and put them in a dish. Just leave a very small quantity of the oil in the pan and keep the rest in a recipient to use for other meals. Whip the eggs (I`m sorry but I'm not very good at cooking terms), add some salt and mix them with the potatoes and onion. Put in the pan and then make the omelette as any other.
It's really excellent.
It takes some time but it's superb.
By the way, you can accompany it with a tomato salad or some fried green peppers.

Caldo

No, caldo is

the liquid you put into the skillet to make the rice boil. It's made of water boiled with pieces of meat or fish (it depends on the kind of paella you are making) and some vegetables. In that way the rice gets a nicer taste.

Paella all the way!!

You should definitely do a massive paella, it is sooooo good! It looks so great and colourful that everyone will be diving in before you know it. It is miimum washing up too.

Paella

I am Spanish and I have read what you say about Paella. Paella is not so easy to make especially for the first time. Some of the ingredients are difficult to find also in London. I know it because I lived there for a while. Making a Paella for a lot of people makes it even more complicated. And in my opinion a Paella with the rice overcooked is rubbish. Try to make Spanish omelettes with the same recipe somebody has already given you and try to add red-pepper when frying the potatoes or any other ingredient and you will see how lovely the omelletes are.
Nevertheless if you still want to make a Paella let me know and I give you my recipe. We do not cook Paella in woks. There is a special pan to cook Paella and it is called Paellera but you can always do it in a big frying pan.
