Paella valenciana

All over Spain it is different ways to arrange a Paella, I am from Valencia the region which makes famous its recipe for Paella. We have to main ways (even should be 10 o more ways to cook Paella)
The most popular is chicken paella (here we use also rabbit together with the chicken but I think this is not a good ingredient for english people)
800 gr chicken; 250 gr green beans; 150 gr white beans; 150 gr broad beans; 1 ripe tomato; 500 gr rice; 8 tablespoons olive oil; a pinch of sweet ground red pepper, saffron and sait. Heat the oil in apaella pan. When hot, add the meat in pieces, fry well and then add green beans, broad beans and white beans. Continué frying for 8 minutes or so and then add the grated tomato. Stir lightly and add the rice, ground pepper, saffron and water (better clear chicken soup) . When boiling, salt to taste.Keeps boiling for 20 minutes at low fire taking care the dish do not get dry before 20 minutes due that the rice will be underdone, if you see after 12 or 13 minutes of boiling the rice does not get dry put more fire to get the rice dried at the 20 minutes
Other way to cook Paella ia Paella Marinera (sea Paella)
400 gr fresh scampi; 200 gr prawns; 200 gr shrimp; 150 gr sea crabs; 250 gr squid; 1 large onion; 4 garlic cloves; 1 ripe tomato, grated; 500 gr rice; 10 tablespoons olive oil; salt, saffron and water. Heat the oil in a paella pan. When hot, add all the seafood, fry well and remove. Using the same pan, add the chopped squid, the onion and garlic. 5 minutes later add the grated tomato. Stir lightly and add the rice, saffron and water (beter clear fish soup). After bringing to a boil, add the seafood again and salt to taste. Better instructions to cook that for chicken recipe.
Also remin tha Paella has a special pan for being cook "paella" even you could try it in a regular pan for frying if you are not able to find this kind of pan at your country.
