Broccoli and stilton soup!

Does anyone have a recipe for broccoli and stilton soup? I've had it in a restaurant so I know I like it. Have had an awful lot of broccoli in my organic box this week and need to do something with it!

Broccoli and stilton soup

Serves 1



Preparation time less than 30 mins

Cooking time less than 10 mins

Ingredients
2 tbsp olive oil
1 clove garlic, chopped
onion, sliced
30g/1oz butter
1 handful grated potato
290ml/ pint vegetable stock
head broccoli, chopped
75g/3oz stilton, cubed
85ml/3fl oz double cream
1 tsp thyme, chopped

and great is you sprinkle some parmesan on top to bring out the cheese...

It's really easy and tasty...enjoy!

Ingredients

head broccoli, chopped
75g/3oz stilton, cubed
85ml/3fl oz double cream
1 tsp thyme, chopped



Method
1. Sauté the garlic and onion in the butter and oil for 2-3 minutes.
2. Add the potato and stock and simmer for 7-8 minutes until the potato is tender.
3. Add all the other ingredients and simmer for 2-3 minutes.
4. Blend the soup in a food processor.
5. Pour into a bowl and serve.

I've just made this...

I've just made broccoli and stilton soup for tea today! This is the recipe I use, it's vegetarian and really simple. Serves 2-3, depending on the size of the broccoli and potato etc.

1/2 onion, chopped
1 medium-large potato, diced
1 head of broccoli
500ml vegetable stock (or water with a veggie oxo cube)
2oz stilton
dash of oil for frying

Personally I prefer sprouting broccoli because it has softer stems than a head of broccoli, so all of it is useable.

Fry the onion in the oil on a high heat, turn down to medium and add the potato and broccoli, stir until the juices begin to come out of the broccoli and potato. Add the stock and simmer on a low heat until the potato is cooked. Its always better to undercook the soup a bit rather than overcook it. Add the stilton, stir in until its melted, then puree the whole lot. Return to the pan, heat through well until bubbling (or erupting like a geyser, since it comes out quite thick...) and serve.
