Mexican cooking for beginners
Hey: I can see the dilemma, being mexican I have come through a lot of semi-mexican recipes that arent really typical, and so I wanted to share what I know that has passed from mother to mother and on to me. I tried to make them as simple as I could without losing the typical taste Mexico. If you have other recipes you wish to share please send them to me, I will choose the most original ones and post them on my blog.

One with bread
Dear daisy260: This is one, I hope you can understand me. Its easy and delicious.
Molletes Ingredients (6) people 1 bagette (bread) 45 grams butter 1 can mashed beens 2 sausages 200 grams mozzarella cheese or another cheese of your preference
Ingredients for the sauce 2 red tomatoes cut in tiny cubes without seeds 2 green chilis (fresh Serrano chilis) cut in tiny cubes without seeds 4 slices white onion cut in tiny cubes 2 teeth or wedge garlic cut in tiny cubes 3 bough fresh corriander or cilantro Salt and pepper as your preference
Procedure Cut the sausages in tiny cubes and in a frying pan with few corn or olive oil fry the sausages, and when them are fried add the mashed beens. Turn off the fire.
In another frying pan with few corn or olive oil fry the garlic. Be careful, do not let that it is burned, add the onion, wait until them seen transparent, add the tomatoes and green chilis. Hot it for one or two minutes. Add a pinch of salt and pepper and finally add the colliander that previously you cut in tiny pieces. Turn off the fire.
Cut the bagette in pieces around 12 centimeters or 5 inches, and cut every piece of bred in the half. Spill a spoon of butter and two spoons of mashed beens with sausages, put several slaces of mozzarella cheese to every piece of bread. Put all the bread in a plain metal (one that you use when you bake cookies, sorry I do not the name in English, are charola metálica). Turn on the electric oven or the oven of your stove in a low temperature. Baked them for 4 minutes or until the cheese is melt or the bread is hot. Now you will have the hot bread, put two pieces of bread in one dish and spill with the tomatoe sauce, or put all the bread in a plain metal in the center of your table.
I hope that you can understand me and I hope my recipe was appeal to you. Write me if you have doubts. I thought in this recipe because probably the ingredients are easy to found, well except the been can, I hope you can find it. If not tell me to give you the recipe of the beens.

Mexican food
We have a lot of recipies with dry chiles, the most popular are enchiladas, pozole, or taquitos al pastor. Is it difficult to you buy in your country dry chiles? but do not worry for this. I will be writing soon several recipies withou dry chiles. Let me do the translation of several mexican cousine like entomatadas, molletes, chilaquiles, What about a tipical desserts, would you like? It is only milk, sugar, eggs, vanila, the same is jericallas is like a flan.
