Work lunches
Try some lentil or kidney bean soup with a side of salad greens with a vinaigrette dressing. I'm big on pb&j sandwiches because they are filling. I supplement with baby carrots and fresh fruit on the side.
Also, try making turkey or chicken sandwiches with roasted bell pepper or sun dried tomato. For spread on the bread, use mustard or light mayo.
Another favorite of mine is tuna salad with cranberries. I mix a small can of tuna with a little light mayo, crushed black pepper, a little dill weed, and a handful of dried cranberries. It's very tasty. You can eat as a salad with spinach, or as a sandwich.
