Algerian food

hello every one

my name is mokhtar i been a chef cook for 12 year's ago am working as cdp in london .
if you like sommes recipes of Algerian food just ask me .
today i want to publishe one of my favorite traditionale fish recipes .

aajijat sardine (sardine bolls)

ingr : for 2 perssones

1,5kg of baby sardines
5 plums tomatoes
3 charlotes
4 cloves of garlic
2 tps of tomatoe puree
somme flower
parsley
thyme
oregano
bay leafs
caraway
cumin
paprika
salt and wp

so clean your sardine and trum them from the bones till when you got a clean meat of sardine after that
chope your charlote very fine and garlic aswell .
chop your halph bunch of parsley and add every thhings on the deep bowl .
add the salt and whaite peper and 1 tsp of caraway and 1tsp cumin andone tea spoon of paprika .
mixe all the mix hard till when the mix become as a pate and hard to play with 'it on your hand .
now cook your tomatoe sauce like normaly chope your tomatoe's and garlic fry them in sauce paute and add 1tps of choped thyme and 3 bay leafs and 1 tsp of choped fresh oregano and don't forget 2 tsp of tomatoe puree and seasining of course.
leave your pain cooking slowly for 20 min after that 1 cup of water .
beside your tomatoe's sauce is cooking now take a small try put your flower and get second try for your sardine boll's after you finsh making sardines bowls add all your sardine on the tomatoe sauce and put the lid on the pain for anoter 15 minutes .
when the sardine is cooking served with limes and bread .

Im a little confused by your recipe , by Charlotte did you mean Echalotte ?? I hope you can reply .
flower is Flour , right ??
Im also from Algeria and i love sardines, unfortunately i have not eaten any for the last 8 years in the UK . the ones at my supermarket look terrible , with red eyes and not a fresh look . so I dont bother . i did eat them last year sorry in NICE south of France, Ah that was a treat , by the beach with plenty of lemon juice .

Algerian crepe recipe

You've offered to supply recipes for Algerian food and I would love a recipe for the entree crepes like what I had recently at a restaurant here in Chicago. They were a wonderful consistency, large and light texture, and were folded with veggies, cheese, nuts and salad ingredients inside. Do you have a recipe like this? Thank you!
