Hi Val,
I cook my lamb shanks this way:
chop six medium sized onions. Place in a deep pan. On top of the onion place the lamb shanks. Sprinkle with salt and pepper and some rosemary. Cover the pan tight fitting lid and put on a low fire on top of the stove to cook for two hours. Serve with mashed potatoes and some boiled veggies.
