Parsnips

Hi

I am looking for a recipe for a pudding with parsnips. It was originally from Home and Freezer digest.

The parsnips were grated and one added lemon rind and coriander I think. Then mixed with some form of sponge mix and baked; the sponge rose to the tip and the base was soft creamy and lemony.

My husband has suddenly remembered it and put in a request, but I had a clearout a while ago and can't seem to find it.

Can anyone help or do you have a similar one?
