How do i make good ice cream???

Can anyone tell me how to keep the ice cream soft? I have just bought a new Ice Cream maker and my first 2 attempts have gone so hard in the freezer that a hammer and chisel would not break it up. Do you have to add som thng to keep it from going too hard.
