Cool original recipe

I'll start off this discussion board then! I have a couple vegetarian friends and it kills me that I can't cook for them. I hate beans and tofu, so I've never really tried vegetarian cooking. I came up with this recipe to start to overcome this. It's simple, and delicious!

Nutty Vegetarian Stuffed Peppers

2 Onions (I use yellow, but I think this recipe is very flexible)
1 cup of finely crushed pecans or walnuts
salted butter (or butter and salt)
1 egg
1 tsp dried pint flakes (optional)

2 Green bell peppers
1 tsp balsamic vinegar
salt

Finely chop the onions and caramelize them in the butter. I usually prepare the ingredients as I cook, so I start the onions in the pan and put in the nuts as soon as I finish crushing them.

After you put the onions on, cut the bell peppers into quarters (they make little boats). Sprinkle the bell peppers with the salt and vinegar and set in the oven to bake. Bake about 15 minutes.

When the onions are done, take them off the heat and put in the raw egg. Mix in. Put the mixture into the peppers, and put them back in the oven for another 15 minutes.

Serve!

well, I usually get darn full off of 2 or 3 quarters. If you have 2 bell peppers, you get 8 quarters, so you can do the math there . It's surprisingly filling.

I'm new to this whole recipe writing deal. I pretty much eyeball everything I make, so it's hard to give an exact # for anything.
