Anyone tried...

bulgur wheat recipes? Supposed to be better for you than ordinary couscous. Any ideas?

Bulgur wheat

Hi, I grew up with bulgur wheat and I love it. It is very filling and nutritious. I have several healthy recipes on my blog made with bulgur wheat at www.fahriyeskitchen.blogspot.c om

Bulgur wheat

110gms (cooked) Bulgur Wheat
1/2 yellow pepper chopped (or your choice of colour)
2-3 Spring Onions chopped
Small Large tin of chickpeas
Peppered Mackerel, Tuna, Chicken etc

Mix ingredients together, toss in fish
Allow the dish to chill for several hours.

(The bulgur wheat should be dry not wet, like couscous, if not dry, put the bulgur wheat in a metal sieve, put a little water in the bottom of the pan, place sieve over the top & heat the water, the steam will dry & separate the wheat).

This is a basic recipe, try adding flavored oils, vinegars, mixed beans, left over cooked meat, cheese, fruit, nuts etc, whole baby tomatoes, almost anything goes.

Keeps for several days in the fridge.

This is the basic starter recipe, from this adapt & change to suit your taste or availability of fridge or cupboard.

Bulgur wheat, feta & herb salad

I've tried this recipe, it serves 2:

150g bulgur wheat
1 and half tsp ground cumin
100g feta cheese
100g chopped cherry tomatoes
a handful of basil leaves
2 tbsp chopped chives
extra-virgin olive oil
half a lime

Put the bulgur wheat in a bowl with the cumin and just cover with boiling water. Put to one side for 10 minutes to soften and absorb the liquid. Drain off any excess. Meanwhile, crumble the feta into a bowl with the cherry tomatoes and herbs. Add to the bulgur wheat and toss together. Drizzle with some olive oil and a squeeze of lime juice.
